2 large aubergines
2 tomatoes
1 onion
2 cloves of garlic
1 tea glass of olive oil
1 tea glass of water
Juice of half a lemon
Salt
Black Pepper
Half a bunch of fresh parsley
Wash the aubergines and slice them lengthwise.
Soak the slices in salted water for about 30 minutes.
Then squeeze the water dry and heat the olive oil in a frying pan.
Lightly fry the aubergine slices and remove the excess oil by taking them on a paper towel.
On the other side, chop the onion and fry it in a pan with a little olive oil until it turns pink.
Crush the garlic and add it to the onion, fry for a few more minutes.
Chop the tomatoes and add them to the onion.
Cook until the tomatoes release their juice and cook until it is absorbed.
Place the aubergine slices in the oven dish.
Pour the tomato mixture over and add the water.
Add salt, pepper and lemon juice. Chop half a bunch of fresh parsley and sprinkle on top.
Bake in a preheated 180 degree oven for about 30-40 minutes. Enjoy with bread on the side.
